Two special people arrived in Florence
to make dance and teach Tango during the last weekend.
I do not know this ancient
dance, which has its roots between Argentina and Uruguay, (source
Wikipedia http://it.wikipedia.org/wiki/Tango
) but for me was enough watch some video of this couple to wrap
myself up by the seductive atmosphere of the Milonga.
Rightly ... before dancing you need a
load of calories.
The better way? A slice of cake, to recharge themselves and celebrate the Masters !!!
A vanilla sponge cake (for the recipe
please visit the post "Joyeux Anniversaire Mon Amour") with
double filling: caramel cream and rich vanilla cream and overall a
really strong Espresso syrup ( you have to stay awake for dancing!!!!
).
On top pink royal icing and roses made
in gum paste, floral decorations (spring is finally arrived!) and
some small silhouettes in sugar paste which remind the couples
dancing on the dance floor.

After that you're ready to prepare your
"before MilongaCake"

RECIPE FOR CARAMEL CREAM :
- 250 gr. of sugar
- 2 table spoon water
- some drops of lemon juice
- 350 ml. of cream
Melt the sugar with water and lemon juice.
In the meantime heat 150 ml of cream.
When the caramel takes an amber colour pick off and add the warm cream. Let it cool !
Whip the rest of the cream and add the caramel.
Let it cool in the fridge and use the cream to fill the cake!
RECIPE FOR RICH VANILLA CREAM :
- 1 Vanilla bean
- 250 gr of icing sugar
- 250 gr of Mascarpone cheese
- 2 egg yolk
- 100 gr of grinded hazelnut
Mix the icing sugar with the egg yolk to make it fluffy.
Add the vanilla seeds and after that the Mascarpone cheese.
Add the grinded hazelnut and put in the fridge till you have to use it!
This cream is rich as quick to prepare.
You can use it also with fruit for a lighter dessert|
